How to make it

  • Heat the oven to 450 and adjust rack to low position. Place empty 6 cup popover pan or 12 cup standard muffin pan in oven.
  • Place flour and salt in a medium bowl and whisk to combine. In a small bowl or large measuring cup,whisk together the milk,eggs, and 2 Tbs. melted butter.. Pour the wet ingredients over the dry and whisk until just combined.
  • Remove pan from oven and butter cups with remaining butter using a pastry brush. Pour batter into buttered cuos,filling each halfway. Bake for 20 mins.. Rotate pan 180 degrees and lower oven temperature to 350 degrees. Continue to bake until well-browned and crisp. about 20 mins longer. Serve hot or warm
  • Makes 6 large or 12 medium depending on the pan used.
  • The batter can be prepared several hours ahead and re-mixed briefly just before adding it to the pan..

    Knife - The reason this and many others has a lower rating is someone is going around giving Pleclare ones arbitrarily on all of her recipes. I've noticed it on others recipes as well. Great use of my popover pan! Great post Pleclare!

    I'm not sure why this recipe has a lower rating than other popover recipes; after all, they all have the same ingredients. Perhaps because this has the extra step of pre-heating the pan. I've found that good popovers require one of two opposite cooking methods to really rise up big and nice. The first is the method you describe of heating the pan before adding the batter. Another method (that I actually prefer) is to butter the pan, add the batter, and put it in a COLD oven. Turn the heat on to 375 and bake for 35-45 min.
