Spiced Pumpkin Cookies

- 2-1/4 cups granulated sugar shopping list
- 3/4 cup vegetable shortening 2 large eggs beaten shopping list
- 2 teaspoons pure vanilla shopping list
- 16 ounces cooked pumpkin shopping list
- 1-1/4 teaspoon baking soda 2 cups raisins 1 cup chopped walnuts shopping list
- 4 cups sifted flour shopping list
- 1/2 teaspoon ground ginger shopping list
- 4 teaspoons baking powder shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 1/2 teaspoon allspice shopping list
- 1/4 teaspoon ground cardamom shopping list
- 1/4 teaspoon ground cloves shopping list
- 1 teaspoon salt shopping list
How to make it
- Preheat oven to 375.
- Cream sugar and shortening in medium bowl then add eggs, vanilla, pumpkin and baking soda. Blend again to thoroughly combine all ingredients.
- Add raisins and walnuts then stir to combine.
- In large bowl sift flour, baking powder, ginger, cinnamon, allspice, cardamom, cloves and salt.
- Pour pumpkin mixture into dry ingredients and stir with wooden spoon until dough is blended. Drop by teaspoonful onto ungreased cookie sheet and bake 10 minutes. Remove from cookie sheet to wire rack to cool.
