Grilled Zucchini Rolls With Shrimp And Vegetables

- 4 medium zucchini shopping list
- 3 gloves garlic, minched shopping list
- 16 raw shrimp, peeled and deveined, tail on shopping list
- 3 stalks celery, cut into matchstick strips shopping list
- 4 Tbsp. olive oil(plus additional for brushing) shopping list
- 2 medium carrots, cut in matchstick strips shopping list
- fresh basil, chopped( for garnish) shopping list
- juice of a lemon shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat grill or grill pan, on medium.
- Using a mandolin or a sharp knife, cut each zucchini in four lengthwise slices. Brush both sides of zucchini slices with oil and season with salt and pepper to taste.Place slices on grill and quickly grill them, turning once, until you get grill marks: remove from grill and set a side.
- Heat 2 Tbsp. oil in a saute pan over medium-high heat,saute garlic for 1 minute. Add shrimp and saute 2 minutes.
- Add half of the celery and carrots and saute 2-3 minutes or until shrimp are cooked through, remove from heat.
- Stir in half of the lemon juice, season with salt and pepper to taste and let cool.
- Lay the grilled zucchini strips on a flat surface. Place 1 shrimp and 1 each of the cooked carrot and celery pieces on one end of a zucchini strip and roll up, secure with a toothpick if necessary.Repeat with remaining zucchini strips, shrimp and cooked celery and carrots.
- In a small bowl, combine remaining celery and carrots,lemon juice and oil, season with salt and pepper to taste and toss well.
- Place the carrot and celery salad in center of a large serving platter and arrange the zucchini wrapped shrimp around the outside, garnish with basil.
