This is the first time that I have made meatballs with spaghetti and I think that it turned out pretty well!! :) Lots of flavor.

Ingredients
  • SAUCE:
  • 1 large sweet yellow onion
  • 5 large cloves garlic
  • 1 28 oz can organic crushed tomatoes with basil
  • 1 28 oz can organic diced tomatoes
  • 1 14.5 oz can diced tomatoes with basil, garlic and oregano
  • 1 6 oz can tomato paste
  • 6 large fresh basil leaves
  • 1/2 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • dash of thyme
  • dash of rosemary (can be omitted)
  • 1/2 tsp garlic powder
  • couple dashes sea salt
  • couple dashes fresh cracked pepper
  • 2 tbsp sugar
  • 2 8 oz packages button mushrooms
  • 15 baby carrots
  • Olive oil for sautéing
  • MEATBALLS:
  • 1 lb lean ground beef
  • 1 package hot lean Italian turkey sausage (19.5 oz I believe)
  • 3 large cloves of garlic
  • 1/2 tsp garlic powder
  • few dashes dried basil
  • few dashes oregano
  • dash of chili powder
  • dash of paprika
  • 1/2 tsp sea salt (may be omitted there is salt in the sausage and beef)
  • 1sp fresh cracked pepper
  • 2 eggs
  • 4 large fresh basil leaves
  • 1 cup Panko breadcrumbs
  • one and 1/2 packages of 100% whole wheat organic spaghetti noodles.

Directions
  1. SAUCE:
  2. sauté onions and garlic
  3. While this is sautéing add dried basil, oregano, garlic powder, parsley, thyme, rosemary, sea salt, and cracked pepper.
  4. After sautéing, add all cans of tomatoes. Mix and bring to a simmer.
  5. Next add coarsely chopped basil leaves and diced carrots.
  6. For the quartered mushrooms, I sautéed them in butter, cracked pepper and sea salt for a few minutes so that they are still firm. I then added them to the sauce.
  7. Lastly add the 2 tbsp of sugar and simmer
  8. MEATBALLS:
  9. Mix all of ingredients together. I did not put them in a particular order, however I do know that I add the eggs last and then mixed with my hands :).
  10. Next I rolled out about 30 1 inch sized (maybe a little bigger) meatballs in my hands.
  11. I then browned the meatballs, added them to the sauce and simmered for 1/2 an hour.
  12. I think that next time I will add some chiltepins to the meatballs. I love spicy foods and they would give it a nice kick!!
  13. Cook spaghetti noodles to your liking. I cook them aldente.
  14. Optional :) : Garnish dish with Parmesan and garlic bread.
