Flavorful vegetarian dish; easy to prepare - can be main dish or side dish, and healthy too. Make ahead of time to enhance flavors!

Ingredients
  • 1 pkg. (10 oz) frozen cheese tortellini
  • 2 cups broccoli florets
  • 1/2 cup red onion, sliced thin
  • 1 cup canned garbanzo beans, rinsed & drained
  • 1 cup canned red kidney beans or cannellini beans, rinsed & drained
  • 1 can pitted ripe olives, drained
  • 1 bottle (8 oz.) fat-free creamy Italian salad dressing
  • 1/4 cup shredded Parmesan cheese, divided
  • 1 tsp. dried oregano
  • 1 tsp. hot sauce
  • 12 cherry tomatoes, halved

Directions
  1. Prepare tortellini according to package directions
  2. drain & place in serving bowl. Add broccoli, onions beans & olives.
  3. Combine the salad dressing, 2 TLBS. parmesan cheese, oregano & hot sauce. Pour over salad and toss gently. Cover & refrigerate for at least 8 hours.
  4. Just before serving, add tomatoes & sprinkle with remaining Parmesan cheese.
