How to make it

  • Turn stove onto low, add butter to skillet.
  • While melting butter, crack eggs into a bowl and mix throughly.
  • Add minced garlic and mix again.
  • Tear cheese slices into small-med pieces.
  • Pour eggs into skillet, turn oven to med-hi.
  • Scrape skillet with a high-heat tolerant (red handle) rubber spatula.
  • After about a minute or two, add cheese and resume mixing.
  • This is a creamy egg recipe, so the eggs will not get dry, but don't leave them runny! Go for a consistency that's about that of cottage cheese, or whatever you like.
  • Toast crossiants on a pannini grill or in stove. Or warm in microwave.
  • I like to make mine with a slice of cheese and eggs, but the rest of my co-workers like to put 2 bacon rounds on each sandwich.
