Sweet Potato Yeast Rolls

- 3 packages active dry yeast shopping list
- 3/4 cup warm water(105-115 degrees) shopping list
- 7 1/2 cups all-purpose flour shopping list
- 1 tablespoon salt shopping list
- 1 teaspoon ground cinnamon shopping list
- 1 1/2 cups sugar shopping list
- 1 1/2 cups shortening shopping list
- 3 cups sweet potatoes- cooked,warm,and mashed shopping list
- 1/2 cup butter-melted shopping list
How to make it
- Combine yeast and warm water in a small bowl. Let stand 5 minutes.
- Combine flour,baking powder,salt,cinnamon,and sugar in large bowl. Cut shortening with fork or pastry blender until mixture is crumbly.
- Add yeast mixture and sweet potatoes. Stir until dry ingredients are moistened.
- Turn dough out onto a floured surface. Knead for 5 minutes.
- Place dough in a lightly greased bowl. Turn dough to coat.
- Cover and refrigerate for 8 hours or overnight.
- Turn dough out onto a floured surface and roll to 1/2-inch thickness.
- Cut with a 2" biscuit cutter.
- Dip rolls quickly in melted butter and place on ungreased baking sheets.
- Cover and let rise in warm place for 30 minutes or until double in size.
- Bake at 400 degrees for 10 minutes or until lightly browned.
- Serve hot with additional butter and honey.
- Note:
- This recipe can be cut in half.
