How to make it

  • Combine yeast and warm water in a small bowl. Let stand 5 minutes.
  • Combine flour,baking powder,salt,cinnamon,and sugar in large bowl. Cut shortening with fork or pastry blender until mixture is crumbly.
  • Add yeast mixture and sweet potatoes. Stir until dry ingredients are moistened.
  • Turn dough out onto a floured surface. Knead for 5 minutes.
  • Place dough in a lightly greased bowl. Turn dough to coat.
  • Cover and refrigerate for 8 hours or overnight.
  • Turn dough out onto a floured surface and roll to 1/2-inch thickness.
  • Cut with a 2" biscuit cutter.
  • Dip rolls quickly in melted butter and place on ungreased baking sheets.
  • Cover and let rise in warm place for 30 minutes or until double in size.
  • Bake at 400 degrees for 10 minutes or until lightly browned.
  • Serve hot with additional butter and honey.
  • Note:
  • This recipe can be cut in half.
