Sweet Potato Yeast Rolls Recipe

Ingredients
  • 3 packages active dry yeast
  • 3/4 cup warm water(105-115 degrees)
  • 7 1/2 cups all-purpose flour
  • 1 tablespoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups sugar
  • 1 1/2 cups shortening
  • 3 cups sweet potatoes- cooked,warm,and mashed
  • 1/2 cup butter-melted

Directions
  1. Combine yeast and warm water in a small bowl. Let stand 5 minutes.
  2. Combine flour,baking powder,salt,cinnamon,and sugar in large bowl. Cut shortening with fork or pastry blender until mixture is crumbly.
  3. Add yeast mixture and sweet potatoes. Stir until dry ingredients are moistened.
  4. Turn dough out onto a floured surface. Knead for 5 minutes.
  5. Place dough in a lightly greased bowl. Turn dough to coat.
  6. Cover and refrigerate for 8 hours or overnight.
  7. Turn dough out onto a floured surface and roll to 1/2-inch thickness.
  8. Cut with a 2" biscuit cutter.
  9. Dip rolls quickly in melted butter and place on ungreased baking sheets.
  10. Cover and let rise in warm place for 30 minutes or until double in size.
  11. Bake at 400 degrees for 10 minutes or until lightly browned.
  12. Serve hot with additional butter and honey.
  13. Note:
  14. This recipe can be cut in half.
