Super Simple Salad

- 1 15 ounce can butter beans, rinsed and drained (can substitue other beans) shopping list
- 1 15 ounce can black beans (rinsed and drained) shopping list
- 1 cup frozen green peas shopping list
- Chopped red onion to taste, about 1/4 cup shopping list
- fresh basil, shredded (I have used the freeze-dried, tastes like fresh, when fresh is unavailable) shopping list
- 12 grape tomatoes (can use other tomatoes, chopped) shopping list
- 4 ounces cheese, cut into cubes or strips (smoked mozarella,etc., your choice) I like feta shopping list
- olives of your choice, I like Kalamata shopping list
- sea salt and freshly ground black pepper shopping list
- DRESSING shopping list
- 1/2 cup extra virgin olive oil shopping list
- 2 tablespoons rice vinegar shopping list
- 1 tablespoon sherry vinegar shopping list
- 1 teaspoon Dijon or whole grain mustard shopping list
- 1/2 teaspoon sea salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
How to make it
- In a large bowl, combine beans, peas, onion and half the basil
- Toss with half the dressing
- Arrange on platter
- Arrange tomatoes and cheese on top
- Cover, refrigerate for about 15 minutes, or up to four hours
- DRESSING
- Combine all in a screw-top jar
- Cover and shake well
- Let stand at room temperature for about 30 minutes before serving
- May pass dressing around when serving
