Ingredients
  • 3 pound beef roast-free from fat as possible
  • 2 whole onions-peeled,about 2 in. in diameter
  • 1/2 teaspoon ground cardamon
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 3 Bay or laurel leaves
  • 1 clove fresh garlic
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions
  1. Place the roast in a good sized pot and cover with water
  2. Add the above ingredients
  3. Boil for three hours over a medium heat replacing the water that boils off
  4. Remove the meat,leave to drain
  5. Slice it as thinly as possible
  6. Serve
  7. Note: The meat will have a delicate pink color on the inside and be brown on the outside.It has a rich,herb flavor and makes the finest eating.
  8. Venison,antelope,moose,caribou,bear,mutton are all wonderful using this recipe.
