Ingredients

3 pound beef roast-free from fat as possible

2 whole onions-peeled,about 2 in. in diameter

1/2 teaspoon ground cardamon

1/2 teaspoon ground cinnamon

1/2 teaspoon ground allspice

1/2 teaspoon ground nutmeg

3 Bay or laurel leaves

1 clove fresh garlic

1 teaspoon salt

1/4 teaspoon ground black pepper

Directions

Place the roast in a good sized pot and cover with water

Add the above ingredients

Boil for three hours over a medium heat replacing the water that boils off

Remove the meat,leave to drain

Slice it as thinly as possible

Serve

Note: The meat will have a delicate pink color on the inside and be brown on the outside.It has a rich,herb flavor and makes the finest eating.

Venison,antelope,moose,caribou,bear,mutton are all wonderful using this recipe.
