Creamy Chicken And Zucchini Soup Recipe
This is a really comforting soup that is easy to make and cooks quickly. I often substitute the cream for half and half in order to lower the fat content. It is delicious either way. Enjoy!

Ingredients
  • 3/4 oz butter (1 1/2 Tbsp)
  • 3 chicken breast fillets, thinly sliced
  • Approx 1 3/4 lbs grated zucchini
  • 1 grated onion (I like using a sweet onion)
  • 2 cloves garlic, crushed
  • 2 Tbsp all-purpose flour
  • 3 cups chicken stock
  • 1 cup cream (or half and half)
  • Kosher salt and fresh ground pepper (to taste)

Directions
  1. Melt butter in a large saucepan.
  2. Add the chicken and cook on medium heat for 1-2 minutes, or until the chicken "changes color".
  3. Add the zucchini, onion and garlic, and cook for 5 minutes, stirring occasionally.
  4. Stir in the flour and cook for 1 minute.
  5. Add the stock and stir until it begins to boil and thickens slightly.
  6. Reduce the heat and simmer for 1 minute.
  7. Stir in the cream and cook for 2 minutes.
  8. Season with salt and pepper and serve.
