Creamy Chicken and Zucchini Soup

- 3/4 oz butter (1 1/2 Tbsp) shopping list
- 3 chicken breast fillets, thinly sliced shopping list
- Approx 1 3/4 lbs grated zucchini shopping list
- 1 grated onion (I like using a sweet onion) shopping list
- 2 cloves garlic, crushed shopping list
- 2 Tbsp all-purpose flour shopping list
- 3 cups chicken stock shopping list
- 1 cup cream (or half and half) shopping list
- kosher salt and fresh ground pepper (to taste) shopping list
How to make it
- Melt butter in a large saucepan.
- Add the chicken and cook on medium heat for 1-2 minutes, or until the chicken "changes color".
- Add the zucchini, onion and garlic, and cook for 5 minutes, stirring occasionally.
- Stir in the flour and cook for 1 minute.
- Add the stock and stir until it begins to boil and thickens slightly.
- Reduce the heat and simmer for 1 minute.
- Stir in the cream and cook for 2 minutes.
- Season with salt and pepper and serve.
