Curried Honey Chicken Recipe

A little sweet,alittle mustardy with a hint of curry. Absolutely deilicious.
Got this from one of my first cooking classes when I moved to N.E.

Ingredients
- 3-4lb. chicken,cut in quarters or eighths
- 2Tbs margarine
- 1/2c honey
- 1/4c prepared mustard
- salt to taste
- 1-2tsp curry powder
- 1/2c almonds,toasted and chopped.
Directions
- Wash and dry chicken. Melt margarine and whisk in remaining ingredients. Roll chicken pieces in mixture to coat both sides. Arrange chicken,meaty side up in a single layer in the baking pan. Bake at 375 for 1 hour,basting occasionally,until chicken is tender and richly glazed.
- This has been a favorite of ours through the years. Leftovers hot or cold are delicious.
