How to make it

  • Rough chop the mint.
  • Bring sugar and water to a boil. Reduce heat and simmer, uncovered, about 4 minutes.
  • Remove from heat and add mint. Cover and steep at least 20 minutes.
  • Strain and discard mint.
  • Chill until needed.
  • Whisk mayo into the mint syrup and blend well.
