Costa Rican Tostada

- 2 tablespoons olive oil shopping list
- 1 garlic clove shopping list
- 1/4 cup red onions, diced shopping list
- 1 cup black beans shopping list
- 1/2 red bell pepper, chopped shopping list
- 1/4 cup green onions, chopped shopping list
- 1 tablespoon chili powder shopping list
- 1 tablespoon hot sauce shopping list
- 4 6-inch tortillas shopping list
- 1 egg shopping list
- 1/2 cup rice, cooked shopping list
- 1 tomato, diced shopping list
- cheddar cheese, shredded shopping list
How to make it
- Heat olive oil in a large skillet over medium heat. Sauté garlic and onions until tender, about 5 minutes. Add beans and stir. Add red peppers, green onions, chili powder and hot sauce; cook for 5 to 6 minutes.
- Meanwhile place tortillas in oven until crispy, about 6 to 8 minutes.
- In a small skillet, scramble the egg. Add egg, rice and tomatoes to black bean mixture and stir to combine.
- To serve, distribute rice and bean mixture over crispy tortillas and top with Cheddar cheese (optional0; slice into quarters for ease
