How to make it

  • Heat olive oil in a large skillet over medium heat. Sauté garlic and onions until tender, about 5 minutes. Add beans and stir. Add red peppers, green onions, chili powder and hot sauce; cook for 5 to 6 minutes.
  • Meanwhile place tortillas in oven until crispy, about 6 to 8 minutes.
  • In a small skillet, scramble the egg. Add egg, rice and tomatoes to black bean mixture and stir to combine.
  • To serve, distribute rice and bean mixture over crispy tortillas and top with Cheddar cheese (optional0; slice into quarters for ease
