Scrambled Eggs With Tomatoes And Peppers Recipe

We have this dish for a light dinner served with my homemade angel biscuits so good. And a dessert if desired.

Ingredients
  • 1 Tbsp. olive oil
  • 2 cups mixed precut onion and bell peppers
  • 1 tsp. dried tarragon
  • 1 can (14-oz.) diced tomatoes, drained
  • 8 eggs, beaten
  • 1/2 tsp. salt
  • Freshly ground black pepper

Directions
  1. Heat oil in a large non-stick skillet over high heat.
  2. Add onions, bell peppers and tarragon, cook stirring, until softened, about 2 minutes.
  3. Add the tomatoes, cook stirring until mixture begins to thickened, about 1 minute.
  4. Pour the eggs over the vegetables.
  5. Cook stirring often with a spatula until eggs are almost cooked through, about 2 minutes (they will continue to cook off the heat).
  6. Season with salt and pepper to taste.

Had this last night, but we added sliced smoked sausage (made with turkey) for a little more substance. Also added shredded cheese at last moment to melt as topping. It's a great recipe; thanks for the posting!
