Bean and Sausage Soup

- 1 lb hot sausage links, cooked then sliced into rounds shopping list
- 1 large onion chopped shopping list
- a few ribs of celery sliced shopping list
- a few carrots cut into half moons shopping list
- a clove or two of garlic shopping list
- a box or bag of many bean soup mix, unseasoned shopping list
- water shopping list
- beef, chicken or veggie stock shopping list
How to make it
- saute the onion celery, garlic and carrots in the pan you cooked the sausage in. Deglaze the pan with a little water or stock to get all the flavor off the bottom of the pan.
- Throw sausage, veggies, bean mix (after rinsing and sorting) and the amount of water or stock the mix calls for, all into a crockpot.
- Turn the crock pot on medium if yours has it. If not put it on high. Cook it all day adding more water and stock to adjust the thickness of the soup.
- I season mine with just a little cracked black pepper. The sausage gives a pretty good flavor to the soup by itself.
