A great, spicy side dish for Indian meals

Ingredients
  • oil
  • SPICE MIX
  • 1 tspn yellow mustard seeds
  • 1 tspn turmeric
  • 2 tspns sambal oelek
  • salt
  • pepper
  • PICKLING SAUCE
  • 4 tblspns red wine vinegar
  • 4 tblspns sugar
  • PICKLES
  • 2 thinly sliced continental (Lebanese) cucumbers with skin on

Directions
  1. Fry the spice mix in a small amount of vegetable oil
  2. Add sliced cucumber
  3. Slowly fry, stirring frequently until the cucumbers cook down
  4. Then add the pickling sauce and continue cooking for a few minutes
  5. Either serve immediately or bottle and seal for future use
