Smoked Mozzarella And Tomato Puff Tartlets

- 250g or 8oz frozen puff pastry, defrosted and divided into 8 pieces shopping list
- 2 tablespoons Pesto shopping list
- 2 large ripe tomatoes, each cut into 4 slices shopping list
- 125g or 4oz smoked mozzarella, cut into 8 slices shopping list
- salt and pepper shopping list
How to make it
- Roll out each piece of the pastry thinly on a lightly floured surface. Using a 10cm/4inch pastry cutter, stamp out 8 circles. Prick the pastry circles with a fork and place on baking sheets.
- Spread each circle of pastry with pestom leaving a thin border around the edge. Top with a slice of tomato and then a slice of mozzarella. Season with salt and pepper.
- Bake the tartlets at the top of a pre-heated oven, 220C (425F) or Gas Mark 7 for 10-15 mins until puffed up and golden. Serve warm
