Smoked Mozzarella And Tomato Puff Tartlets Recipe

Ingredients
  • 250g or 8oz frozen puff pastry, defrosted and divided into 8 pieces
  • 2 tablespoons Pesto
  • 2 large ripe tomatoes, each cut into 4 slices
  • 125g or 4oz smoked mozzarella, cut into 8 slices
  • salt and pepper

Directions
  1. Roll out each piece of the pastry thinly on a lightly floured surface. Using a 10cm/4inch pastry cutter, stamp out 8 circles. Prick the pastry circles with a fork and place on baking sheets.
  2. Spread each circle of pastry with pestom leaving a thin border around the edge. Top with a slice of tomato and then a slice of mozzarella. Season with salt and pepper.
  3. Bake the tartlets at the top of a pre-heated oven, 220C (425F) or Gas Mark 7 for 10-15 mins until puffed up and golden. Serve warm
