How to make it

  • Roll out each piece of the pastry thinly on a lightly floured surface. Using a 10cm/4inch pastry cutter, stamp out 8 circles. Prick the pastry circles with a fork and place on baking sheets.
  • Spread each circle of pastry with pestom leaving a thin border around the edge. Top with a slice of tomato and then a slice of mozzarella. Season with salt and pepper.
  • Bake the tartlets at the top of a pre-heated oven, 220C (425F) or Gas Mark 7 for 10-15 mins until puffed up and golden. Serve warm
