Bacon and asparagus frittata

- 4 bacon rashers, rind removed, sliced thickly shopping list
- 1 large red onion, sliced thinly shopping list
- 170g asparagus, trimmed, halved lengthways shopping list
- 4 eggs shopping list
- 4 egg whites shopping list
- 1 cup (250mL) buttermilk shopping list
How to make it
- Preheat oven to moderate. Oil deep 19cm square cake pan, line base and sides with baking paper.
- Cook bacon, stirring, in a heated non stick frying pan until crisp; drain on absorbent paper. Add onion to same pan, cook, stirring until soft. Layer bacon, onion and asparagus in prepared pan.
- Whisk eggs, egg white and buttermilk in a medium jug; pour into prepared pan. Bake, uncovered, in moderate oven about 35 minutes or until frittata is set. Stand 10 m ins before cutting into squares.
