How to make it

  • Preheat oven to moderate. Oil deep 19cm square cake pan, line base and sides with baking paper.
  • Cook bacon, stirring, in a heated non stick frying pan until crisp; drain on absorbent paper. Add onion to same pan, cook, stirring until soft. Layer bacon, onion and asparagus in prepared pan.
  • Whisk eggs, egg white and buttermilk in a medium jug; pour into prepared pan. Bake, uncovered, in moderate oven about 35 minutes or until frittata is set. Stand 10 m ins before cutting into squares.

    I like the looks of this idea. I have the ingredients but with a lighter twist. Will be using Turkey Bacon and EggBeaters. I love buttermilk but will have to consider that luxery.
