Orzo Apple Saute Recipe
A great alternative to rice or potato sides. Quick and easy and healthier than Rice-A-Roni

Ingredients
  • 2 cups Orzo
  • 4 cups water
  • 1 tsp oil
  • 1tsp garlic
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1tsp ranch seasoning
  • 1 chicken bullion cube or 1 cup chicken broth
  • 1/2 cup chopped mushrooms *(optional)
  • 1 chopped apple
  • 2 cups chopped spinach
  • salt /pepper to taste * optional

Directions
  1. Saute 1 cup of Orzo, onion & celery in oil on medium heat until brown (5-10 minutes). Season with garlic
  2. Add remaining Orzo, water and all other ingredients (except spinach). Once water is boiling, reduce heat to low-medium and simmer 25 minutes until Orzo is tender.
  3. Add spinach & stir. Let simmer 3 minutes, then serve.
