Soup Gazpacho Recipe
I usually don't like cold soup unless it is fruit related,but I do like this one.You can also use this to replace a salad at a Summer meal.

Ingredients
  • Two part recipe--First part--
  • In large bowl
  • Cut up three clove of garlic,really fine
  • Take 4 and 1/2 pound of fresh tomatoes,peeled(fresh is best,but you may use 5 one pound cans of tomatoes,with juice instead)
  • Peel 1 medium cucumber and grate it into the bowl
  • Take 2 medium green,sweet peppers,grate them,seeds and all.
  • Take 1 medium onion and grate it into all the above.
  • Put the above though a food mill,(but if you don't have one,just,mash it together really well.

Directions
  1. Second part recipe--
  2. In a small bowl:
  3. 3 teaspoon cumin,1 Tablespoon salt,1 Tablespoon cayenne pepper
  4. 4 Tablespoons olive oil,and 4 Tablespoons vinegar
  5. Blend well and add to the vegetable mixture,along with 1 cup of dried white bread,crumbled
  6. Mix in 1/2 gallon of cold water
  7. Place the mixture in a cool place for 4 to 5 hours
  8. Pour mixture thought a strainer to remove the solids,you just want the liquid.
  9. Place in soup dishes
  10. Have ready at the table:
  11. Bowls of onion,peeled cucumber,tomatoes all cut to about 1/4 " peices,and a bowl of white bread squares,dried out ,or small crackers
  12. Allow the people to add these to the soup as desired.
  13. This is also good eaten with cracker spread with a little Roquefort Cheese.
  14. Long recipe,but easy to make.
