How to make it

  • preheat oven to 325F
  • FOR CRUST
  • In a large mixing bowl whip butter and margarine with an electric mixer , at medium to high speed until doubled in size .Add herbs and garlic. mix well add eggs, egg yolk, bread crumbs and adjust seasoning with salt and pepper. Whip for 2 mins and set aside
  • Arrange fillets on a baking pan , pat dry and season with salt and pepper. place crust mixture on a sheet of parchment paper level off to 1/.4 inch think cut parchment and crust using kitchen shears cut to fit size of each fillet and gently slide butter on top of each fillet using a warmed spatula. bake for 15mins
  • to serve arrange mashed potatoes in center of each plate top with fillet and garnish with green onion tomato and rosemary sprigs
