Ingredients
  • One 3-4 pound chicken /cut into 12 pieces
  • Juice from 1 Sour Orange ("naranja agria")* Can be purchased in a spanish store, or can be substituded with dry white wine.
  • 1 Small spanish Onion sliced
  • 1/2 Tsp of Ground Oregano
  • Adobo(recipe follows)
  • 1 tbs. fresh cilantro leaves / chopped
  • 1 tsp of seedless Olives
  • 2 tbs. tomato paste
  • 3 tbs. vegetable oil
  • 1/2 Tsp of Sugar
  • salt and pepper to taste
  • about 2 cups of water

Directions
  1. Wash chicken with water and pour sour orange juice over it
  2. In a bowl mix chicken with adobo, oregano, salt & pepper.
  3. Let marinate for at least an hour.
  4. In a heavy pot, heat oil over medium high heat.
  5. Add sugar, and let it brown.
  6. Put chicken in the pot and saute until nice and brown, add 3 tablespoons of water.
  7. Simmer over the medium high heat until the chicken is nice and tender adjusting water when needed.
  8. Add tomato paste and 1/2 cup of water.
  9. Simmer this over low heat until the sauce is thickened.(not watery)
  10. Add the cilantro leaves,onion slices and olives.
  11. Adjust salt to taste
  12. Serve with Rice and Beans and a side of salad
