Great way to use cabbage. Nice presentation. Crowd pleaser using simple, healthy, ingredients. Adapted from a La Leche League cookbook recipe. I often double it. The tukey sausage makes it fantastic. I have also used ground elk or beef.

Ingredients
  • 1 medium head cabbage
  • 1 lbs ground meat (combo of ground turkey and ground turkey sausage works great)
  • 1 cup cooked rice
  • 1 yellow onion finely chopped
  • 3 garlic cloves chopped
  • 3 grated carrots (optional)
  • 1 T Italian seasonings
  • 1-2 T ground pepper
  • 1 T salt
  • 1 T dried thyme (optional)
  • 2 cups tomato sauce (use pasta sauce or canned tomato, etc.)

Directions
  1. Cook cabbage in boiling salted water in large saucepan for about 15-20minutes or until outer leaves can be removed
  2. Do not over boil so that the cabbage is too soft
  3. Drain and cool cabbage
  4. Tear off about 12 of the outer leaves, leaving them intact so they can be stuffed
  5. Chop remaining cabbage
  6. Combine meat with the next 7 ingredients to create stuffing
  7. Spoon stuffing into cabbage leaves and roll to enclose filling
  8. Arrange seam side down in a greased baking dish.
  9. Top with choped cabbage
  10. Cover cabbage rolls with tomato sauce
  11. Bake for about 45 min.-1 hour
  12. Enjoy!
