Tofu Cheddar Sandwich Recipe

Ingredients

4 oz tofu

3 – 4 baby bella mushrooms

3 – 5 slices cheddar cheese

1/2 avocado, sliced

2 slices marble rye bread (sourdough, or any other hearty bread)

Dijon mustard or aioli garlic mustard (Trader Joe’s carries it)

Cooking spray or olive oil

Directions

Keep tofu in a single patty or cut into slices. Pat dry with a paper towel. Spray skillet with cooking spray and set tofu in skillet. Brown both sides.

Slice baby bella mushrooms. Add to skillet with tofu. Sauté until tender.

Slice cheese into enough pieces to cover a piece of bread.

Slice half avocado to cover a slice of bread.

Spread mustard on both pieces of bread.

Layer all ingredients on bread, close, and enjoy!
