TROPICAL FIESTA STEAK This recipe came from an estate sale. I obtained it when I purchased the family collection from the Barnes Estate in Euless, Texas in 1998.

Ingredients
  • 1/4 cup frozen orange juice concentrate thawed
  • 3 tablespoons cooking oil
  • 2 tablespoons honey
  • 1 tablespoon spicy brown mustard
  • 1 tablespoon sliced green onions
  • 1 teaspoon snipped fresh mint
  • 2 teaspoons bottled hot pepper sauce
  • 1-1/2 pounds boneless beef sirloin steak cut 1” thick
  • 1/2 cup chopped red sweet pepper
  • 1/2 cup chopped red apple
  • 1/2 cup chopped pear
  • 1/2 cup chopped peeled peach
  • 1/4 cup chopped celery
  • 2 tablespoons sliced green onion
  • 2 teaspoons lemon juice

Directions
  1. Stir together concentrate, oil, honey, mustard, sliced green onion, mint and hot pepper sauce.
  2. Set aside 1/4 cup of the mixture to make the relish then cover and chill until needed.
  3. Place steak in a plastic bag then set in a shallow bowl and pour remaining marinade over meat.
  4. Seal bag and turn to coat meat with marinade then chill 24 hours turning bag occasionally.
  5. Combine reserved marinade, pepper, apple, pear, peach, celery, green onion and lemon juice.
  6. Cover and chill until serving time up to 24 hours.
  7. Remove steak from plastic bag reserving marinade.
  8. Grill steak on rack of an uncovered grill directly over medium coals to desired doneness.
  9. Turn once and brush occasionally with marinade until the last 10 minutes of grilling.
  10. Allow 18 to 22 minutes for medium doneness.
