Tenderloin Steaks With Sauteed Onions

TENDERLOIN STEAKS WITH SAUTEED ONIONS This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Dallas, Texas in 1988.
Ingredients
- 6 beef tenderloin steaks 1" thick shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 2 tablespoons butter shopping list
- 1 small red onion cut into 6 wedges shopping list
- 2 cloves garlic minced shopping list
- 1 teaspoon crushed dried basil shopping list
- 1/2 teaspoon crushed dried oregano shopping list
- 2 tablespoons whipping cream shopping list
- 6 teaspoons orange marmalade shopping list
How to make it
- Sprinkle meat with salt and pepper.
- In large skillet melt butter over medium heat then add onion and garlic.
- Cook and stir for 8 minutes then remove onion from skillet.
- Increase heat to medium high then add steaks to skillet and cook 6 minutes per side turning once.
- After turning sprinkle with basil and oregano.
- Remove meat from skillet and place on serving platter.
- Return onions to skillet and heat through.
- Remove skillet from heat and stir in whipping cream then spoon cream over steaks.
- Top each steak with 1 teaspoon orange marmalade then divide onions evenly among the steaks.
