Ingredients
  • Pastry for single crust or unbaked already prepared pie crust
  • Pie filling:
  • 3/4 c splenda
  • 1 tbsp cornstarch
  • 2 tbsp lemon juice
  • 3/4 ground cinnamon
  • 1/4 tsp salt
  • 1/8 tsp ground nutmeg
  • 6 c peeled, cored, sliced Granny smith apples (bout 6 medium)
  • Streusel Topping:
  • 1/2 c all purpose flour
  • 1/2 c splenda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 4 tbsp butter, melted
  • 1/2 c chopped nuts (optional)

Directions
  1. Roll pastry on floured surface into circle 1 inch larger than 9" pie plate. Ease pastry into plate, trim and flute edge. Set aside. If you bought a already prepared unbaked pie crust, skip this section.
  2. Pie Filling: Combine splenda, cornstarch, lemon juice, cinnamon, salt, & nutmeg; sprinkle over apples in large bowl. Toss to coat well. Spoon apples into pie crust.
  3. Streusel Topping: Combine flour, splenda, cinnamon, & salt. Stir in melted butter until mixture resembles coarse crumbs. Stir in nuts (opt.). Sprinkle over apples. Bake in preheated 375 oven 45-55 mins or until apples are tender & crust is golden. Cool on wire rack. Serve warm or at room temp. If desire, top with sugar free vanilla ice cream.
