My college roommate Avan used to delight everyone with this dish. She is an intuitive cook, but she tried to write down the genius of this dish. I ADORE it.

Ingredients
  • 10-12 lasagna noodles (ready-to-bake will save time!)
  • 16 oz. part-skim ricotta cheese
  • 1/2 cup milk
  • 2 cans of italian tomatoes
  • 1 green bell pepper
  • 1/2 onion
  • 3 cloves garlic
  • salt and pepper
  • italian seasoning
  • 1 jar of pasta sauce
  • 2 cups mozzarella cheese
  • parsley flakes

Directions
  1. SAUCE
  2. Saute bell pepper, onion and garlic.
  3. Add canned tomatoes and pasta sauce.
  4. Heat sauce thoroughly.
  5. Season sauce to taste with salt, pepper, and italian seasoning.
  6. CHEESE
  7. Mix ricotta cheese, parsley flakes and milk.
  8. NOODLES
  9. If you didn't get ready-to-bake noodles, cook them al dente, drain and rinse with cool water.
  10. Layer in pan as follows: sauce, noodles, cheese, sauce, etc.
  11. Once all ingredients are layered, top with mozzarella cheese.
  12. Cover with aluminum foil.
  13. Bake at 325 degrees for 60 minutes or until it's bubbly and cheese has melted and browned.
