Swiss Breakfast Bread

- First you make the Muesli: shopping list
- 1 1/2 cups old-fashioned oats shopping list
- 1 1/2 cups water shopping list
- 2 cups shredded unpeeled apples (Granny Smith) shopping list
- 1 1/2 cups or 9 oz. pitted prunes, chopped shopping list
- 2 tablespoons honey shopping list
- 2 tablespoons lemon juice shopping list
- 1/2 tsp. cinnamon shopping list
- Mix together and refrigerate overnight. I put my quartered and cored apples (3) in food processor with prunes and chop them together. shopping list
How to make it
- Then in the morning mix together the bread. You have enough Muesli to make this following recipe twice.
- 1 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp. vanilla
- 2 cups Muesli
- 1 1/2 cups flour
- 1/2 tsp. salt
- 1 tsp. soda
- 1/2 tsp. nutmeg
- 3/4 cup chopped walnuts
- Preheat oven to 350 degrees. Grease 9x5 inch loaf pan and sprinkle bottom and sides with oats.
- In a mixing bowl, beat sugar, oil, eggs, and vanilla. Stir in 2 cups Muesli. Blend in remaining ingredients.
- Mix until just well-blended. Pour into prepared loaf pan.
- Bake 55-60 minutes until pick inserted comes out clean.
- Cool in pan 15 minutes, then loosen edges and turn out on a rack and cool.
