Chicken soup for the sick

- 1 (2-3lbs) whole chicken shopping list
- 3 stalks celery with leaves, chopped shopping list
- 1 lb baby carrots, chopped shopping list
- 2 onions, chopped (optional) shopping list
- 1 cubes beef bouillon, crumbled shopping list
- 1 pkt chicken noodle soup mix shopping list
- 2 (14.5oz) cans low-sodium chicken broth shopping list
- 1 pinch dried thyme shopping list
- 1 pinch poultry seasoning shopping list
- 1 pinch dried basil shopping list
- 5 black peppercorns, crushed shopping list
- 2 bay leaves shopping list
- 1 pinch dried parsley shopping list
- 1 (8oz) pkg pasta noodles shopping list
How to make it
- Place chicken in a large pot and cover with water
- Place celery leaves in pot and bring boil, then reduce heat and simmer until chicken is cooked through, 30-40 mins
- Remove chicken from pot and place in a bowl until cool enough to handle
- Meanwhile, place celery, carrots, onion, bouillon, soup mix, and chicken broth in pot and let simmer
- Season with thyme, poultry seasoning, basil, peppercorns, bay leaves, and parsley
- De-bone chicken and cut up meat into bite-size pieces
- Return meat to pot
- Cook until vegetables are tended and flavored are well blended, up to 90 mins
- Stir in pasta into pot and cook 10-15 mins more, until noodles are al dente.
- Serve hot and get well!
