Ingredients
  • 2 and a half cups self rising flour
  • 2 large eggs
  • 1 fourth cup sugar
  • 1 half teaspoon vanilla flavoring
  • 1 and a half cup milk
  • 4-6 eggs scrambled
  • 1/2 to 1lb. bacon fried

Directions
  1. Preheat skillet.
  2. In medium to large bowl mix flour, eggs, sugar and vanilla flavoring.
  3. Add milk to the consistency you would like for pancake batter. Add more milk, about 1 tablespoon at a time for thinner pancakes. Spray skillet with cooking spray, or butter. Pour batter onto skillet until it's rounded into 8" to 10". Cook for about 1 and a half minutes on both sides. You should have a nice golden brown color. When pancake is done lay 1 or 2 strips of cooked bacon onto center. Next add a heaping tablespoon of scrambled eggs on top of bacon. Roll up and it's ready to eat. You can add nuts, chocolatechips or fruit such as strawberries or blueberries to this recipe. Gourmet Sigon cinnamon adds a nice flavor as well
