How to make it

  • Brown the chicken pieces in oil until browned on all sides.
  • Add the jar of salsa over the top.
  • Add about 1/3 of the jar of water.
  • Cover the pan and simmer for about 15 minutes.
  • Turn chicken pieces over and baste with sauce.
  • Cook for another 15 minutes.
  • Remove chicken pieces to serving platter.
  • Line the platter with nacho chips so it's in a "fan shape".
  • Then crush nacho chips over the top of the chicken.
  • Spoon about 1/2 of the sauce over the top.
  • Sprinkle with the grated cheddar and dot with the rest of the sauce.
  • Sprinkle the scallions over the top.
  • Microwave the platter for about 20 seconds and serve with a nice salad. Enjoy!
