Taco Chicken Recipe
Easy to prepare and I have yet to find anyone who doesn't love it!

Ingredients
  • One cut-up frying chicken OR 8 10 pieces of legs/thighs
  • One 12 oz. jar of medium salsa
  • 2 Tbs. cooking oil
  • Nacho chips
  • Grated sharp cheddar cheese
  • Scallions, chopped for garnish

Directions
  1. Brown the chicken pieces in oil until browned on all sides.
  2. Add the jar of salsa over the top.
  3. Add about 1/3 of the jar of water.
  4. Cover the pan and simmer for about 15 minutes.
  5. Turn chicken pieces over and baste with sauce.
  6. Cook for another 15 minutes.
  7. Remove chicken pieces to serving platter.
  8. Line the platter with nacho chips so it's in a "fan shape".
  9. Then crush nacho chips over the top of the chicken.
  10. Spoon about 1/2 of the sauce over the top.
  11. Sprinkle with the grated cheddar and dot with the rest of the sauce.
  12. Sprinkle the scallions over the top.
  13. Microwave the platter for about 20 seconds and serve with a nice salad. Enjoy!
