Taco Chicken

- One cut-up frying chicken OR 8 10 pieces of legs/thighs shopping list
- One 12 oz. jar of medium salsa shopping list
- 2 Tbs. cooking oil shopping list
- Nacho chips shopping list
- Grated sharp cheddar cheese shopping list
- scallions, chopped for garnish shopping list
How to make it
- Brown the chicken pieces in oil until browned on all sides.
- Add the jar of salsa over the top.
- Add about 1/3 of the jar of water.
- Cover the pan and simmer for about 15 minutes.
- Turn chicken pieces over and baste with sauce.
- Cook for another 15 minutes.
- Remove chicken pieces to serving platter.
- Line the platter with nacho chips so it's in a "fan shape".
- Then crush nacho chips over the top of the chicken.
- Spoon about 1/2 of the sauce over the top.
- Sprinkle with the grated cheddar and dot with the rest of the sauce.
- Sprinkle the scallions over the top.
- Microwave the platter for about 20 seconds and serve with a nice salad. Enjoy!
