Chili Tamale Pie

- butter for casserole shopping list
- 1 (25-ounce) can chili with beans shopping list
- 1 (14-1/2 ounce) can tamales, each cut into thirds shopping list
- 1 medium onion, chopped shopping list
- 1 or 2 jalapeno peppers, seeded and finely chopped shopping list
- 1 cup crushed Fritos shopping list
- 1 cup (4 ounces) shredded sharp cheddar cheese shopping list
- 1 avocado shopping list
- lemon juice shopping list
- Optional Toppings: shopping list
- 1 tomato, diced shopping list
- Green or black olives, to taste shopping list
How to make it
- Preheat oven to 400-degrees F.
- Lightly butter a 1-3/4 quart casserole.
- Peel and slice avocado; squeeze lemon juice over to cover.
- Refrigerate until ready to serve.
- Combine chili, tamales, chopped onions and jalapenos; pour into casserole.
- Bake for 25 minutes or until bubbly.
- Combine corn chips and cheese; sprinkle over top of casserole.
- Bake 5 additional minutes or until cheese melts.
- Top with avocado slices, diced tomato and olives.
- Enjoy!
