Ingredients
  • Butter for casserole
  • 1 (25-ounce) can chili with beans
  • 1 (14-1/2 ounce) can tamales, each cut into thirds
  • 1 medium onion, chopped
  • 1 or 2 jalapeno peppers, seeded and finely chopped
  • 1 cup crushed Fritos
  • 1 cup (4 ounces) shredded Sharp cheddar cheese
  • 1 avocado
  • Lemon juice
  • Optional Toppings:
  • 1 tomato, diced
  • Green or Black olives, to taste

Directions
  1. Preheat oven to 400-degrees F.
  2. Lightly butter a 1-3/4 quart casserole.
  3. Peel and slice avocado; squeeze lemon juice over to cover.
  4. Refrigerate until ready to serve.
  5. Combine chili, tamales, chopped onions and jalapenos; pour into casserole.
  6. Bake for 25 minutes or until bubbly.
  7. Combine corn chips and cheese; sprinkle over top of casserole.
  8. Bake 5 additional minutes or until cheese melts.
  9. Top with avocado slices, diced tomato and olives.
  10. Enjoy!
