Cappellini With Herbed Spinach Recipe
This is a very nice and refreshing pasta dish. I eat it as a main course for a lite lunch or dinner and eat it alongside a small dinner salad. Lots of great tastes in this one. Enjoy

Ingredients
  • 8 ounces angel hair pasta
  • 1 pound fresh spinach
  • 1 tablespoon virgin olive
  • 1 white onion chopped
  • 2 tablespoons fresh parsley chopped
  • 1/2 teaspoon dried leaf basil
  • 1/2 teaspoon dried leaf oregano
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons grated parmesan cheese

Directions
  1. Bring a large kettle of water to a boil and cook pasta until al dente about 3 minutes.
  2. Drain in a colander then set aside.
  3. Meanwhile place spinach in a steamer rack over boiling water until slightly wilted.
  4. In a nonstick skillet heat oil and sauté onion until softened.
  5. Place spinach, onion, parsley, basil, oregano, nutmeg, salt and pepper in a blender.
  6. Process to puree.
  7. Place pasta in a serving bowl then toss with sauce and sprinkle with Parmesan cheese.
