Pickled Carrots Recipe
I love these little pickled delights, great by themselve or wonderful as a relish. I always triple the recipe because it is even better then next day or two. Enjoy

Ingredients
  • Pickled Carrots
  • 2 pounds carrots
  • 1 white medium onion
  • 1 green pepper medium
  • 1 can tomato soup
  • 1 cup granulated sugar
  • 3/4 cup white vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard
  • 1/2 teaspoon salt

Directions
  1. Scrape and slice carrots thinly then peel and chop onion.
  2. Cut pepper in half then remove seeds and cut into thin slivers.
  3. Combine remaining ingredients then blend well and pour over vegetables in a large bowl.
  4. Cover and refrigerate several hours before serving then drain and serve as an appetizer.
