Mexi-Corn Lasagna Recipe
I've been making this casserole for years now and it is one of my families favorites. I like to serve it with a romaine and mandarin orange salad.

Ingredients
  • 1 LB . ground beef or turkey, browned and drained
  • 1 can (17 oz.) whole kernel corn, drained
  • 1 can (15 oz.) tomato sauce
  • 1 cup salsa
  • 1 TBLS. chili powder
  • 1 1/2 tsps. cumin
  • 1 carton (16 oz.) low fat cottage cheese
  • 2 eggs, slightly beaten
  • 1/4 cup shredded parmesan cheese
  • 1 tsp. oregano
  • 1/2 tsp. garlic salt
  • 12 corn tortillas
  • 1 cup shredded cheddar cheese (I use more!)

Directions
  1. Brown meat.
  2. Combine meat and next 5 ingredients together in a large skillet and simmer 5 minutes, stirring frequently.
  3. In a large bowl, combine cottage cheese, eggs, parmesan cheese, oregano and garlic salt; mix well.
  4. Lightly grease a 13 x 9 x 2 inch baking dish.
  5. Arrange 6 tortillas on the bottom and sides of the baking dish, overlapping as necessary.
  6. Top the tortillas with half of the meat mixture.
  7. Spoon cheese mixture over meat and spread to cover.
  8. Arrange remaining tortillas over cheese and top with remaining meat.
  9. Bake in a 375 degree oven for about 30 minutes or until hot and bubbly.
  10. Remove from oven and sprinkle with cheddar cheese.
  11. Let stand 10 minutes before serving.
