Mexi-Corn Lasagna

- 1 LB . ground beef or turkey, browned and drained shopping list
- 1 can (17 oz.) whole kernel corn, drained shopping list
- 1 can (15 oz.) tomato sauce shopping list
- 1 cup salsa shopping list
- 1 TBLS. chili powder shopping list
- 1 1/2 tsps. cumin shopping list
- 1 carton (16 oz.) low fat cottage cheese shopping list
- 2 eggs, slightly beaten shopping list
- 1/4 cup shredded parmesan cheese shopping list
- 1 tsp. oregano shopping list
- 1/2 tsp. garlic salt shopping list
- 12 corn tortillas shopping list
- 1 cup shredded cheddar cheese (I use more!) shopping list
How to make it
- Brown meat.
- Combine meat and next 5 ingredients together in a large skillet and simmer 5 minutes, stirring frequently.
- In a large bowl, combine cottage cheese, eggs, parmesan cheese, oregano and garlic salt; mix well.
- Lightly grease a 13 x 9 x 2 inch baking dish.
- Arrange 6 tortillas on the bottom and sides of the baking dish, overlapping as necessary.
- Top the tortillas with half of the meat mixture.
- Spoon cheese mixture over meat and spread to cover.
- Arrange remaining tortillas over cheese and top with remaining meat.
- Bake in a 375 degree oven for about 30 minutes or until hot and bubbly.
- Remove from oven and sprinkle with cheddar cheese.
- Let stand 10 minutes before serving.
