Relatively Healthy Crab Cakes

- 1 lb lump crabmeat, shell pieces removed shopping list
- 1 1/3 c fresh breadcrumbs (for mixture) shopping list
- 1/3 c minced green onions shopping list
- 1/3 c chopped fresh parsley shopping list
- 2 tbsp lemon juice shopping list
- 1 tbsp 2% milk (we used lite soy milk instead) shopping list
- 1 tsp hot sauce shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 4 egg whites shopping list
- 1 1/3 c fresh breadcrumbs (for dredging/coating) shopping list
- 2 tbsp olive oil, divided shopping list
How to make it
- Combine first 10 ingredients in a bowl and stir well.
- Divide crabmeat mixture into 8 equal portions.
- Place 1 1/3 c breadcrumbs into a shallow dish.
- Dredge crabmeat portions in breadcrumbs and shape into patties.
- Heat 1 tbsp oil in large nonstick skillet over medium-high heat.
- Add 4 patties and cook each side until golden (~3 min each side).
- Repeat with remaining 1 tbsp oil and 4 patties.
