Hot And Sour Broccoli Beef

- ¾ pound boneless tender beef steak (sirloin, rib eye, top sirloin) shopping list
- 1 pound fresh broccoli (trimmed) shopping list
- 1 medium onion (thinly sliced) shopping list
- 1 large clove fresh garlic (minced) shopping list
- 1 medium sized jalepeno pepper (sliced - seeds removed) shopping list
- ½ teaspoon sugar shopping list
- 1 tablespoon & 5 teaspoons cornstarch (divided) shopping list
- ¼ teaspoon crushed red pepper (add more or less if desired) shopping list
- 3 tablespoons soy sauce (divided) shopping list
- 3 tablespoons vegetable oil (divided) shopping list
- 2 teaspoons seasoned rice vinegar shopping list
How to make it
- Cut beef into thin slices. Slice the jalepeno pepper in half and remove the seeds and veins. Take the pepper and cut it into thin slices.
- Combine 1 Tbsp each: cornstarch and soy sauce with garlic and sugar into a medium bowl. Stir in the beef and jalepeno slices. Let stand for 15 minutes.
- Next remove flowerets from broccoli and cut into bite-sized pieces. Peel stalks, cut diagonally into thin slices.
- Combine 1 Cup water, remaining 2 Tbsp. soy sauce, 5 teaspoons cornstarch and crushed red pepper into a small bowl.
- Heat 1 Tbsp. oil in a hot wok or large skillet over High heat. Add beef mixture and stir-fry 2 minutes; remove beef.
- Heat remaining 2 Tbsp. oil in the same pan. Add broccoli and onion; stir-fry 2 minutes. Sprinkle 2 Tbsp. water over the vegetables. Cover and cook for 2 minutes, stirring occasionally.
- Add beef and soy sauce mixture. Cook and stir until sauce boils and thickens. Remove from heat and stir in vinegar.
- Serve over cooked white rice
