How to make it

  • I quick boil the beans for about 5 minutes or so. Drain the beans and add more water to cover. Never salt the beans-it will make them tough. If you want salt, do it after they are cooked. Add the celery and onion, and the ham hock. Cook with a lid on for about 1 hour. Add more water as needed. Add the ketchup, mustard, brown sugar and liquid smoke to the beans. Cook over low heat until the beans are soft and the meat fall from the ham hock. Take the ham out and let cool slightly. Remove the lid from the beans and cook over low heat. Take all fat and bone from the hock and return shreds of the ham back to the beans and serve.
