Pattis Turkey-Vegetable Chili Recipe
Zesty chili with ground turkey and vegetables. Can be simmered on stove or thrown in a crock pot. Better still the next day!

Ingredients
  • 1 lb. ground turkey
  • 1 ½ Tblsp chili powder
  • 3 cups water
  • ¾ tsp salt
  • ¾ tsp dried oregano
  • ¾ tsp ground cumin
  • ¼ tsp black pepper
  • 2 cups diced zucchini
  • 2 cups sliced fresh mushrooms
  • 1 cup chopped onion
  • ¾ cup thinly sliced carrot
  • 2 (14 oz) cans no-salt Whole tomatoes (undrained and chopped)
  • ½ cup chopped green pepper
  • 1 (14 oz) can kidney beans (rinsed)
  • 1/3 cup no-salt tomato paste
  • 1 large clove garlic (minced)
  • 2 Tblsp canned chopped green chilies
  • 2 chopped jalepenos (optional)

Directions
  1. Cook meat in a large dutch oven over medium heat until browned, stirring to crumble.
  2. Drain and pat dry with paper towels.
  3. Wipe drippings from pan with a paper towel.
  4. Return meat to pan.
  5. Add remaining ingredients; bring to a boil.
  6. Reduce heat and simmer uncovered at least 1 hour, stirring occasionally.
  7. Yield: 3 quarts
  8. About 197 calories per 1 ½ cup serving
