Inun-On Bicolano Fish Dish Recipe

Ingredients
  • 1 slab of pork fat (trimmed from about a kilo of whole pork kasim)
  • 7 pieces of tambakol or yellow fin steaks
  • 10 pieces of kamias, cleaned (if kamias is unavailable, 1 big pack of sinigang mix is acceptable)
  • 1 tsp. rock salt
  • 2 tbsp oil

Directions
  1. rub the base of the shallow pot (or clay palayok) with oil
  2. carefully place in the slab of fat at the base of the pot
  3. place the tambakol or yellow fin steaks on the fat
  4. top the fish steaks with kamias
  5. (alternately, you can simply pour in powdered sinigang mix in lieu of kamias)
  6. sprinkle with rock salt
  7. add enough water to just cover the fish steaks
  8. cover and bring to a boil
  9. check from time to time if fish is soft
  10. serve hot with steamed rice

Yes, a little salty. that is why we filipinos eat it with rice to balance the taste. :)
