Cottage Pie Recipe
A mashup of several recipes, including an old family sloppy joe recipe, makes a simple cottage pie.

Ingredients
  • 4 pieces bacon, chopped
  • Onion, chopped, to taste
  • 2 lbs. ground beef
  • 1/2 c. low carb ketchup
  • 2 t. yellow mustard
  • 1 can Cambell's chicken gumbo soup
  • Salt and pepper to taste
  • 1 egg, beaten
  • 4 oz. cheddar cheese, shredded
  • 2 lbs. frozen cauliflower
  • 4 tablespoons butter
  • 1/2 cup sour cream
  • 2 tablespoon chives, minced
  • Salt and pepper to taste
  • 4 oz. cheddar cheese, shredded

Directions
  1. Preheat oven to 350º.
  2. While preparing beef part, start cooking cauliflower according to directions (overcook by 5 minutes).
  3. In a large skillet, fry the bacon until crisp. Remove bacon and fry onion in bacon fat until tender. Add ground beef and brown. Remove any excess liquid and fat. Add ketchup, mustard, and soup. Cook for a few minutes to reduce the amount of liquid. Add salt and pepper to taste. Remove from heat to cool slightly. Add bacon, egg and cheese and spread on the bottom of a casserole dish.
  4. Drain the cauliflower. Put the cauliflower, butter and the sour cream in a food processor. Puree until smooth. Add the chives and pulse to blend. Season if necessary, then spread evenly over the meat. Sprinkle the cheese over the top. Bake at 350º for 35 minutes, until hot and bubbly.
