Crusted Kingfish Salad With Grapefruit And Mint

- 4 x80g [23/4oz] kingfish fillets,skin and bones removed[you can use tuna salmon or scallops] shopping list
- 2 tblsp fennel seed and pepper spice mix [see below] shopping list
- 1tblsp olive oil shopping list
- 2 handfuls finely sliced fennel shopping list
- 16 pink grapefruit segments shopping list
- 16 mint leaves shopping list
- juice of 1 lemon shopping list
- 3-4 tblsp lemon infused olive oil shopping list
- 4 anchovies,finely diced shopping list
- 1 long red chilli, finley sliced shopping list
- 2-3 handfuls water crease leaves shopping list
- fennel seed AND pepper spice MIX shopping list
- 100g[31/2oz] fennel seeds shopping list
- 30g[1oz]black pepper corns shopping list
- 15g[1/2oz]sea salt shopping list
How to make it
- Put spice mix in a pan over med heat cook until spices
- are fragrant and salt is starting golden,cool and grind with motor and pestle or spice grinder. Makes about 150g[51/2oz]
- Roll the kingfish in the spice mix. Heat oil in fry pan and cook fish about 30sec on each side until sealed but stil raw in middle
- Take fish out of pan and let rest
- Mix the rest of ingredients to make a salad spoon onto plates.
- slice fish and arrange on top of salad
- Enjoy
