Crusted Kingfish Salad With Grapefruit And Mint Recipe

Ingredients
  • 4 x80g [23/4oz] kingfish fillets,skin and bones removed[you can use tuna salmon or scallops]
  • 2 tblsp fennel seed and pepper spice mix [see below]
  • 1tblsp olive oil
  • 2 handfuls finely sliced fennel
  • 16 pink grapefruit segments
  • 16 mint leaves
  • juice of 1 lemon
  • 3-4 tblsp lemon infused olive oil
  • 4 anchovies,finely diced
  • 1 long red chilli, finley sliced
  • 2-3 handfuls water crease leaves
  • FENNEL SEED AND PEPPER SPICE MIX
  • 100g[31/2oz] fennel seeds
  • 30g[1oz]black pepper corns
  • 15g[1/2oz]sea salt

Directions
  1. Put spice mix in a pan over med heat cook until spices
  2. are fragrant and salt is starting golden,cool and grind with motor and pestle or spice grinder. Makes about 150g[51/2oz]
  3. Roll the kingfish in the spice mix. Heat oil in fry pan and cook fish about 30sec on each side until sealed but stil raw in middle
  4. Take fish out of pan and let rest
  5. Mix the rest of ingredients to make a salad spoon onto plates.
  6. slice fish and arrange on top of salad
  7. Enjoy

I like the citrus, lemon,pink grapefruit segments make for a refreshing taste.
The spice rub gives a nice smoky blackened quality.
