Balsamic Spritzer Recipe
This can be used as a salad dressing that you spritz on, rather than toss with. You can also use a tablespoon as dressing and toss as usual.

Ingredients
  • 6 tablespoons minced shallot
  • ½ cup balsamic vinegar
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • ½ cup broth of your choice (I like mushroom soaking liquid)
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons minced garlic
  • ½ cup chopped fresh Italian parsley

Directions
  1. Mix all ingredients in a jar and shake well to blend.
  2. Leave at room temperature for at least one hour, shaking every so often, to allow all the flavors to develop. Leave overnight if you can.
  3. Remove all solids using a coffee filter, and put the liquid into a spritzer bottle.
  4. You will have to shake each time you use it, as the liquids will separate.
  5. Nutrients are analyzed by the tablespoonful.
  6. Calories: 25.2; Fat: 1.7 g; (58.9%); Protein: .2g; Carbs: 2.5g; Chol: 0; Sodium: 68mg.
