Nutty Pumpkin Waffles

- 2 cups all purpose flour shopping list
- 1/4 cup granulated sugar shopping list
- 1 tablespoon cornstarch shopping list
- 2 teaspoons baking powder shopping list
- 2 teaspoons ground cinnamon shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon ground ginger shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 2 large eggs separated shopping list
- 1-3/4 cup milk shopping list
- 1/2 cup pure pumpkin shopping list
- 2 tablespoons butter melted shopping list
- 3/4 cup chopped pecan shopping list
- pumpkin Maple Sauce: shopping list
- 1 cup maple syrup shopping list
- 3/4 cup pure pumpkin shopping list
- 1/4 teaspoon ground cinnamon shopping list
How to make it
- Combine flour, sugar, cornstarch, baking powder, cinnamon, salt, ginger and nutmeg.
- Combine egg yolks, milk and pumpkin in medium bowl then mix well.
- Add to flour mixture then stir in butter.
- Beat egg whites in small mixer bowl until soft peaks form.
- Gently fold into pumpkin mixture.
- Preheat waffle iron according to manufacturer's directions.
- Depending on size of waffle iron pour 1/2 cup to 1-1/2 cups batter onto hot iron.
- Generously sprinkle with nuts then bake 5 minutes or until steaming stops.
- Repeat with remaining batter and nuts then serve with sauce.
- To make sauce heat maple syrup, pumpkin and cinnamon in small saucepan until warm.
