CARAMEL GLAZED APPLE CAKE This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 1/2 cup shortening
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1-1/3 cups sugar
  • 2 eggs
  • 2 cups apples finely chopped
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 cups sifted flour
  • 1/3 cup water
  • Caramel Glaze Topping:
  • 2 tablespoons shortening
  • 1/2 cup brown sugar firmly packed
  • 2 tablespoons cream
  • 1/8 teaspoon salt
  • 1 teaspoon corn syrup

Directions
  1. Blend shortening, salt and spices then add sugar gradually and cream well.
  2. Add eggs one at a time beating well after each addition then add apples and mix well.
  3. Sift baking powder and baking soda with flour 3 times.
  4. Add flour to cream mixture alternately with water mixing after each addition until smooth.
  5. Bake in greased pan at 350 for 45 minutes.
  6. Combine shortening, brown sugar, cream, salt and syrup in saucepan and bring to rolling boil.
  7. Remove from fire and cool then pour on warm cake and spread evenly.
