How to make it

  • Pit prunes and cut into small pieces then add banana and powdered sugar and mix thoroughly.
  • Add salt to the eggs and beat until very light.
  • Mix in sugar then add water alternately with flour sifted with the baking powder.
  • Add flavoring and mix thoroughly.
  • Pour into a greased shallow pan and bake 20 minutes at 425.
  • Turn out on damp cloth and roll it up then unroll and spread with filling.
  • Roll again and remove from damp cloth.
  • Spread top with powdered sugar.
  • Note: Vary this by mixing cooked apricots and walnuts with the prunes, or chopped dried dates, pecans and prunes.
