Prune Banana Roll

- Filling: shopping list
- 1-1/4 cups cooked prunes shopping list
- 1 cup sliced banana shopping list
- 3 tablespoons powdered sugar shopping list
- Pastry: shopping list
- 3 eggs shopping list
- 1/4 teaspoon salt shopping list
- 3/4 cup sugar shopping list
- 5 tablespoons cold water shopping list
- 2 cups flour shopping list
- 1-1/2 teaspoons baking powder shopping list
- 1 teaspoon lemon extract shopping list
How to make it
- Pit prunes and cut into small pieces then add banana and powdered sugar and mix thoroughly.
- Add salt to the eggs and beat until very light.
- Mix in sugar then add water alternately with flour sifted with the baking powder.
- Add flavoring and mix thoroughly.
- Pour into a greased shallow pan and bake 20 minutes at 425.
- Turn out on damp cloth and roll it up then unroll and spread with filling.
- Roll again and remove from damp cloth.
- Spread top with powdered sugar.
- Note: Vary this by mixing cooked apricots and walnuts with the prunes, or chopped dried dates, pecans and prunes.
