Grilled Mustard Chicken Breasts Recipe
This is a recipe I obtained from one of my bunko friends. She serves this with wild rice and a dinner salad. It's good, it's moist, it's flavorful and it always eaten up with no leftovers for us to take home - DANG IT....Enjoy

Ingredients
  • 4 chicken breast halves without skin
  • 2 teaspoons Dijon mustard
  • 3-1/2 tablespoons white wine vinegar
  • 2 teaspoons garlic minced
  • 2 teaspoons honey
  • 1 tablespoon fresh thyme minced
  • 1/3 teaspoon coarse salt
  • 1-1/3 dashes red pepper flakes
  • 1 tablespoon olive oil
  • 4 sprigs fresh thyme

Directions
  1. Place chicken breasts within a folded piece of plastic wrap.
  2. Slightly flatten upper portion of each breast to promote even grilling.
  3. Place breasts in a shallow glass or ceramic dish.
  4. Place mustard, vinegar, garlic, honey, thyme, salt and pepper in small bowl.
  5. Stir with fork to combine.
  6. Add oil a little at a time and whisk to combine marinade then pour marinade over breasts.
  7. Cover with plastic wrap and marinate in refrigerator turning once or twice in marinade for 4 hours.
  8. Remove breasts from marinade scraping any bits clinging to chicken back into shallow dish.
  9. Transfer all marinade to small saucepan and bring to a boil then reserve.
  10. Lightly grease grill rack with cooking spray then preheat grill and place breasts on rack.
  11. Cook covered with lid basting frequently with marinade for 6 minutes per side.
