Pork Calvados with Caramelized Apples

- 1 large bag of whole wheat noodles, cooked according to package directions shopping list
- 2 pound boneless pork tenderloin cut into 1 inch slices shopping list
- 5 tablespoons butter - divided shopping list
- 4 medium golden delicious apples – peeled, cored, and thinly sliced shopping list
- 1 teaspoon sugar shopping list
- 2 large shallots, chopped shopping list
- 1 tablespoon chopped fresh thyme or 1 teaspoon dried shopping list
- 1/4 cup calvados or other apple brandy shopping list
- 1 cup whipping cream shopping list
- 1/4 cup apple cider shopping list
How to make it
- Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add apples and sugar to skillet and sauté until golden brown, about 6 minutes. Set aside.
- Place pork between plastic wrap and pound to ¼ inch thickness. Melt 2 tablespoons butter in another heavy large skillet over high heat. Season pork with salt and pepper and sauté until just cooked through and golden on each side, about 2 minutes per side. Transfer to plate; keep warm (for example, keep in microwave)
- Melt 1 tablespoon butter in same skillet over medium heat. Add shallots and thyme and sauté 2 minutes. Add Calvados and boil until reduced to glaze, scraping up any browned bits. Stir in cream and cider; boil until mixture thickens to sauce consistency, about 3 minutes. Season with salt and pepper.
- To serve, place noodles among plate and arrange pork on top. Spoon sautéed apple slices on top and cover generously with sauce.
